Date Caramels
I'm a skeptic of some paleo recipes that claim to "taste just like" a coveted treat. With no butter or refined sugar, it’s hard to believe these little candies taste like caramel — but they do! This guilt-free indulgence was modified from a City Market recipe page. Enjoy!
Date Caramels
1 cup pitted dates (about 14 large medjool dates)
1/2 cup natural creamy almond butter
2 Tbsp. coconut oil
1/2 tsp. vanilla extract
1/4 tsp. salt
Flaky sea salt
Soak dates in hot water 15 minutes and drain. Line loaf pan with parchment paper and coat with nonstick cooking spray. Set aside. In bowl of food processor, combine dates, peanut butter, coconut oil, vanilla and salt. Process until smooth. Spread evenly on bottom of prepared pan and freeze 60 minutes. Slice into 1-inch squares, sprinkle with sea salt and serve. Store in an airtight container in the freezer up to 1 week.
