Experiment with whatever veggies you have on hand.
1/2 head red cabbage, sliced thinly
2 carrots, peeled and grated
2 c. kale, sliced thinly
2c. spinach, sliced thinly
1/4 c. thinly sliced or diced red onion
1/2 c. Rosaleen's Dijon Vinaigrette
Combine all ingredients into a large bowl and toss.
